Up and out. As long as you're hitting with the legal part of the glove, there's no right way to do it. The two ways I like to do it are
1. Bring my hand up along my body, then push it out when it gets up to my shoulder.
2. Bring my hand up in an arc. That is, instead of bringing my hand straight up like in #1, I bring it almost on a diagonal towards the opponent's face. I then flick it out when it gets to an appropriate level (which could be shoulder height or even lower if I want to throw to the body).
They both have their place. Practice using both to try to throw off-speed punches and changing the rhythm of your attacks.
Be careful with this, though - it's very easy to hyperextend your elbow doing this technique.
