Weight training for combat sports (not weight lifting) is great for gaining solid, usable muscle, however, the size you're losing now
might be body fat, which is a good thing.
Training everyday might be a little too much. Even well conditioned athletes need a rest day at least once a week, especially if your workouts are intense.
I wouldn't be too worried about losing size unless your heart is set on the next weight class up. You might be more natural in a lower weight class.
More importantly, how is your strength, speed and bodyfat level?
Increasing muscle mass takes time. Good intense heavy-bag work supplemented with functional resistance training will do the trick. Just be patient.
