I've been training over the summer and am wondering how often you should do intervals. Right now, I do them 2 days a week switching between a track program and hill sprints (very fun). I find it hard to fit the training all in 1. Most people telel me 2-3 days a week is more than enough, more often than not though I find myself very sore. Any advice on the soreness? I also do this jump rope drill (extremely difficult for me right now) 100 skips 10 burpees 10 squats 10 sit ups 10 pushups repeat 10 times (with no rest)

Twice a week
Twice a week is plenty for intervals. Of course, space them out - Mon and Thurs for eg, and then throw in a long distance run on Saturday. As you surely know, intervals are incredibly taxing. If you are truly pushing yourself, you're going to be sore. There is not getting around it. That kind of soreness requires rest time.
Hill sprints are great. There is nothing like sprinting with added resistance. Try hill sprints on a sand hill for even greater intensity.

Not too much you can do about the soreness. Your body will eventually adapt, but ensure you are stretching before and after the workout (and throughout the day). As well, you have to eat enough high quality foods to give your body the fuel it needs to repair the damage you do. Give it what it needs and you'll make incredible gains. Massage can also help with the soreness (if you can stand it).
