Boxing Workout Program

I've been training over the summer and am wondering how often you should do intervals. Right now, I do them 2 days a week switching between a track program and hill sprints (very fun). I find it hard to fit the training all in 1. Most people telel me 2-3 days a week is more than enough, more often than not though I find myself very sore. Any advice on the soreness? I also do this jump rope drill (extremely difficult for me right now)
100 skips
10 burpees
10 squats
10 sit ups
10 pushups
repeat 10 times (with no rest)
